- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt until well combined.
- In a large bowl, beat butter and sugar until light and fluffy, approximately 2 minutes. Add egg and beat until incorporated.
- Mix in buttermilk and vanilla extract. The batter may appear curdled, which is normal.
- Gradually add dry ingredients to wet mixture, mixing until just combined. Do not overmix.
- Using a cookie scoop or tablespoon, drop 2-tablespoon rounds of batter onto prepared baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes until tops spring back when gently pressed. Cool completely on wire rack.
- Beat butter until creamy. Add powdered sugar and beat until smooth. Mix in marshmallow creme, vanilla, and salt until fluffy and fully combined.
- Spread or pipe generous dollop of filling onto flat side of half the cookies. Top with remaining cookies, flat side down, to create sandwiches.
